Regarding the language I mean this:
You enter directly to your user profile or to all users and select your profile then click on edit, and within the options there should be this one that indicates language, when you change that from uk to spanish you should be shown the wordpress panel in general in Spanish without the notice you comment:
“The language of this site is Spanish (Spain). Your admin language is English (UK).”
Regarding the missing elements, being a paid add-on we cannot verify with the developer, but you can do it directly and they will tell you why these texts are not translated, also check if the translations in loco translate are 100% the elements that have to do with the booking plugin.
