Lidl surrenders to the successful fresh gazpacho business: this is its new version with pink tomato

In the summer of 2018, Lidl’s offer of fresh gazpachos and salmorejos was limited and was limited to external brands. Thus, its catalog focused on pasteurized products or gastronomic innovations, such as flavored gazpachos. However, the unstoppable trend of fresh recipes has forced the German supermarket chain to change course.

In Lild’s defense, three years ago there were very few supermarkets offering unpasteurized gazpacho and salmorejo alternatives. El Corte Inglés was the company that had the most brands, but all with high prices. And Mercadona had released its version just a year before, as the brand explained to this medium. Thus, Lidl was comfortable with its wide assortment of Tetra Brik pasteurized gazpacho recipes, ranging from the original version and mild alternatives. Or premium options, such as bio or recipes made with strawberry and watermelon.

However, three summers later, Lidl has stood up to the new unpasteurized trend, . Currently, not only does it have its own fresh version under its Chef Select brand, but it has also launched a new variety with chef Pepa Muñoz and under a new brand, Origen y Tradición.

Lidl and Chef Pepa Muñoz have come together to launch their new gazpacho ‘Origen y Tradición’, the only one made with Rosa tomato and whose recipe incorporates the best ingredients of national origin. With it, Lidl has wanted to recover a very old tomato variety that is practically in disuse in the large distribution market, due to its large size, weight and uneven appearance; but of great flavor and gastronomic value.

The cook has been responsible for preparing the recipe for the new Lidl gazpacho, which is already available in the company’s more than 600 stores in Spain at a price of 3.29 euros. A launch that has involved more than a year of work, looking for the perfect recipe. For this, Pepa Muñoz has chosen the best ingredients of national origin: Rosa tomato, Lamuyo peppers from Almería, garlic from Las Pedroñeras, chives and Picual Extra Virgin Olive Oil from Andalusia.

This new launch is also the first of its new Origin and Tradition brand, with which the company reinforces its commitment to offer a select assortment of flagship products of Spanish gastronomy, of the highest quality at the best price. Lidl expects to unveil new launches under its new brand soon.

Why fresh unpasteurized gazpachos and salmorejos are all the rage

The old rows of pasteurized gazpacho and salmorejo cartons that filled the supermarket shelves a few years ago are giving way to their fresh alternatives. Undoubtedly, good news for lovers of this recipe, since the differences with respect to the original flavor are important. The truth is, both products have nothing to do with each other.

Tetra brik gazpachos and salmorejos are subjected to a homogenization process at a controlled temperature that prevents the development of microorganisms. This process can be pasteurization, applying temperatures of around 70º Celsius for 15 minutes, or sterilization. Depending on the type of heat treatment chosen, the expiration date is different. However, the new fresh versions do not undergo any type of treatment and, therefore, their original flavor is more respected: gazpacho and salmorejo, unlike creams, soups or prepared dishes, is a recipe that is eaten raw. Thus, Eduardo Gallardo, secretary of the Salmorejo Brotherhood, explained to this medium that pasteurization processes completely change the flavor because “they alter the components of basic ingredients such as oil or tomato.”
