Hello Alberto.
You can modify the logo that is shown on invoices and emails from the prestashop administrator:
.- Go to preferences -> Themes.
.- Select the Invoice and email logos tab
The size of the logo can vary from one template to another but it would be uploading a logo with a smaller size than the one you have added now.
You can use an editor such as Windows Paint to reduce the size of your logo.
