The best cheese in the world is Spanish: this is Olavidia, from Jaén

The World Cheese Awards (WCA) 2021 contest, known as the cheese Oscars, has awarded the exemplary Olavidia, from the Quesos y Besos cheese factory, located in Guarromán (Jaén), as the best in the world at a gala held on Wednesday in Oviedo.

This goat cheese has been chosen among the sixteen that have managed to access the grand final of this contest, in which more than 4,000 varieties from 48 countries on five continents have participated. This Jaén cheese is made from goats of the Malaga breed that graze freely in the mountains. A quality that is reflected in the quality of the products, manufactured with the combination of innovation and traditional procedures.

It is not the first time that Olavidia cheese has been awarded. In fact, in 2018 it was considered the best cheese in Spain in the Gourmet Cheese Championship. Now this product made with the oldest form of fermentation has been recognized; with the lactic bacteria present in the milk as the best cheese in the world.

In this contest, 250 judges spread over 85 tables have evaluated the cheeses based on scales such as shape, smell, touch, taste, presentation or processing difficulty.

A cheese without additives or preservatives

This cheese is made with the oldest form of fermentation; from lactic acid bacteria present in goat milk. This type of bacteria acts on lactose (milk sugar) and degrades it to lactic acid. In these cheeses, the draining (the loss of part of the whey contained in the milk) occurs spontaneously.

It receives a maturation of between 15 to 20 days and once opened it should be consumed between 3-4 days because it does not have any type of additive or preservative.
