What is sake and why is it fashionable?

The meaning of sake is “alcoholic drink”. It is a very typical Japanese drink, with which all kinds of dishes are usually paired, due to its gustatory and olfactory versatility. Far from being a distillate, sake is based on double fermentation, which is basically what sets it apart from our wines.

Sake is obtained from the fermentation of rice. In its composition, it contains 20% rice, koji (a mushroom widely used in Japanese recipes) and 80% water. Many speak of this drink as if it were a Japanese wine, but its difference with wine lies in the fermentation process, which in the case of sake is double.

In Spain we have always associated sake with those somewhat strange shots that used to be served in Chinese restaurants. Until now, this drink has not been given the prominence it deserves, but thanks to some wineries that import the product of different quality and origin, it is increasingly common to find bottles of this Japanese drink in Spain.

Exactly the same as with Spanish wine, it is very different depending on the producer, the fermentation time, the type of rice, etc. Therefore, it is possible to taste the different aromas and textures through a tasting. The sake category is obtained taking into account the polishing of the rice: the more polished the rice, the better the drink will be for the final consumer.

In Japan there is no Denomination of Origin, as in the case of Spanish wines, but there are different provinces or prefectures in which it is made. In total there are 47 Japanese provinces that offer the best sake in the world. Each type of drink offers very different flavors and nuances, which are conquering the Spanish consumer.

How to taste Japanese sake?

The sake that can be taken hot or cold. It is best to keep it at a cold temperature (between 5 and 10 degrees Celsius), in a dry place where direct sunlight does not fall. However, it is possible to consume it up to 55 degrees Celsius, depending on the type of product.

Its graduation is not very high because it is a fermented drink. In general, there are about 15 degrees of alcohol that are hidden in each bottle, something very similar to wine.

Nowadays it is increasingly easier to find very good quality sake in Spanish wineries. In addition, there is already a Spanish producer that has launched with this drink.
