Gastronomy converted into Intangible Heritage of Humanity

UNESCO recognizes nine recipes or gastronomies as Intangible Heritage of Humanity. It all started in 2008 and to date some very curious typical dishes have been added, coming from all over the planet.

The distinction as intangible heritage is not taken by the dish itself. It really is the elaboration, the ingredients, the culture and the craftsmanship that prevail. Unesco warns that these are typical gastronomies that should not be lost or forgotten.

9 World Heritage dishes

1. Kimchi

It is the most popular recipe in Korea. Unesco recognizes as intangible heritage both the Kimchi that is made in North Korea and that of South Korea. Both areas do it in a similar way, although with substantial differences. For example, Kimchi from North Korea is less spicy.

It is a preparation based on cooked vegetables, among which cabbage stands out. These vegetables incorporate a seasoning of species and fermented fish. Tradition states that Kimchi has to be cooked in community during the summer, with the aim of having reserves during the coldest season.

2. Michoacán-style Mexican cuisine

Mexican gastronomy is part of the heritage of humanity for its combination of culture and tradition. To make it, different customs are followed, which unite entire communities. UNESCO also recognizes the production of some of the local ingredients used for each recipe.

3. Gingerbread cookies

They are a whole tradition of Croatian culture and gastronomy. They are already famous all over the world, especially in the winter season. Unesco has rewarded the tradition of a recipe that has been alive since the Middle Ages and that still has the expertise of the best master craftsmen. The different decorations of these cookies are the essence for them to form part of the intangible heritage.

4. Turkish coffee

It is not about the unique taste of this Arabic coffee. The award is received for its production process, around hospitality and leisure. Turkish coffee is cooked very slowly in small copper jugs, thus maintaining the essence of tradition.

5.Washoku

Washoku translates to “Japanese cuisine.” Unesco includes it among the world heritage sites due to the sustainability and respect for the environment that emerges from each dish. This gastronomy uses local ingredients, among which fish, rice and vegetables typical of each area of ​​Japan stand out.

6.lavash

Lavash comes from Armenia. It is a very fine bread cake, which has been made in the traditional way for centuries. It is the women who are in charge of these recipes and they always do it as a family. At Armenian weddings, the bride and groom carry lavash cakes on their shoulders, as a symbol of prosperity and fertility.

7. Mediterranean Diet

The Mediterranean Diet is an Intangible Heritage of Humanity declared by Unesco. Healthy recipes from Mediterranean countries, such as Spain, Greece, Portugal, Italy or Morocco, among others, are recognized. It is positioned on this list as a good option for healthy cuisine, created with fresh products, among which olive oil and fish stand out.

8. Gourmet food from France

French gastronomic food is a feast in itself. Families come together around a table to celebrate the most important moments of their lives. UNESCO highlights the variety of recipes and the perfect pairing between them and the best French wines.

9. Chios Mastic

This transparent resin comes from the island of Chios, in Greece. Due to its unique form of cultivation, the base is obtained for making chewing gum and all kinds of sweet recipes. For some years now, the Lentisco has been part of the intangible heritage of humanity declared by Unesco.
