I understand that you mean modules that publish Joomla articles (latest entries, latest articles in a certain category, etc.).
The article image displayed in modules depends on the module itself, it is not part of a specific Joomla feature.
Therefore, what you would have to do is enter the configuration of these modules and see if they have any parameter to define what will be the image that will accompany the article.
If you do not have any parameters of this type, and only load the intro image, it would be necessary to apply changes in the code of the module that you are using so that it can obtain the image of the article text itself, although this can become relatively complex .
